Dry, fresh, crisp and delicate. La Gitana is the classic manzanilla and a favourite for the locals in Spain.
  • Grape variety: 100% Palomino Fino
  • D.O. Manzanilla – Sanlucar de Barrameda
  • Colour: Pale straw yellow with greenish hues
  • Nose: Complex, sharp and delicate. The characteristic aromas derived from its production and biological aging give this wine a peculiar personality influenced by the fresh fragrance of the sea breeze that reaches the winery, located near the sea.
  • Palate: Fresh, dry, light on the palate and with a touch of bitterness
  • Vineyards: It is a generous wine made from palomino fino grapes from the historic Balbaina Alta estate, one of the estates with albariza soils with the greatest Atlantic influence in the entire Jerez region.
  • Wine Making: The must obtained is distinguished by a peculiar salinity, is perfect for raising manzanilla. Once fermented and headed to 15ºC, the wine ages a maximum of 6 years, using the criaderas and soleras system, always under the continuous care of the flower veil, which preserves it from oxidation. The first three years, the wine remains in the oldest soleras of the winery, which date from 1792, the year of its foundation, and which are found in dependencies located just 300 meters from the river Guadalquivir. After that time, the manzanilla goes to the main winery of San Fermín, where, for another two or three years, it will finish being refined and polished in thick barrels.
