Manchego is Spain’s most famous cheese. Produced in La Mancha in Central Spain, it is made from 100% Manchega sheep’s milk. The Manchego you will buy from The Spanish Hamper is a high quality artisan produced cheese made from pausterized milk.
The cheese has a distinctive zig-zag pattern on the outer rind which is produced from the traditional use of esparto grass molds and wooden presses.
The inedible rind of the cheese ranges in colour from yellow to a mid-brown. The cheese itself is firm, with small holes spread throughout. The abundance of wild herbs in Central Spain’s grazing lands gives Manchego its special taste and aroma. Our Manchego cheese is matured in a cave for 8 months, giving it its superb long and exuberant flavour while the texture is firm but not dry.
